Hard but supple
AUS-10 steel owes its hardness mainly to the very high carbon content of about 1.05. This means that we can grind the knives very sharp. To increase the elasticity of the steel, AUS-10 has nickel, manganese and silicon added. This creates a steel which is extremely hard but also flexible. Perfect for a high quality kitchen knife.
